This white queso dip recipe is pulled together with just three ingredients! Mexican white cheese dip is a favorite in our house and I think it will be in yours too.
Let’s talk.
You know when you go out for Mexican and they bring you chips and salsa and you’re, like, the happiest person on Earth, because free chips and salsa! Life doesn’t get any better.
Except let’s be real. Life totally gets better when they bring out that creamy smooth white cheese dip. It’s totally okay if you’re the type of person to request a straw to drink your cheese with. I’m right there with you. We can be cheese drinkers together.
Well, when I was in high school one of my friends made me cheese dip using a couple of slices of orange American cheese and a little milk melted together on the stove. It was divine and I was instantly hooked. Then I grew up and forgot all about that recipe.
Until, that is, people started talking about how the white queso dip recipe from Mexican joints is just melted white American cheese. Light bulb moment, guys.
I used my high school friend’s super easy method of creating cheese sauce and I am now in major trouble, dipping every last thing I can find in this Mexican white cheese dip. Life is so delicious.
Since there is a big football game coming up soon, I thought I’d share the recipe.
We dip all kinds of things in here:
- Taquitos
- Mini Tacos
- Chips
- Veggies
- Pretzels
So, here’s the scoop on this cheese dip – you’re going to want to hit up your deli counter and ask for a half pound of white American cheese. I just get it in sandwich slices, but you could ask for a block of it and grate it at home if you like. Sandwich slices work surprisingly well though!
I don’t recommend purchasing the white cheese in individual wrappers with the rest of the American cheese. I’m not sure it would have nearly as authentic of a taste as the deli counter cheese does.
Also, feel free to spice this up with some tomatoes and chilis or some diced jalapeno. I kept it simple and classic with a tiny sprinkle of taco seasoning.
Three Ingredient White Queso Dip
Ingredients
- 1/2 pound white American cheese deli slices
- 1/2 cup whole milk
- 1 teaspoon taco seasoning optional
Instructions
- Cut or tear the cheese slices into quarters and place in the bottom of a medium sauce pan. Add the milk and turn the heat to medium low.
- Whisk constantly, being careful to scrape the bottom so as not to burn the cheese. Reduce the heat if needed to prevent the cheese from burning. Continue whisking until the cheese has fully melted into a smooth sauce.
- Sprinkle in the taco seasoning, whisk well, and serve immediately.
- Cheese will begin to thicken as it cools. You can stir in more milk to make for a thinner consistency as it cools or you can reheat as needed.

Is it okay to make this in a crockpot?
Karly says
Honestly, I haven’t tried it so I’m not sure how it would work. I would recommend making it on the stove as directed and then keeping it on low in a crockpot to keep warm and melty. Be sure to stir often though. ๐
