I’m so in love with the tangy heat of ranch dressing and buffalo sauce that I can’t stop. I don’t want to stop. I must not stop. I will not stop. Please don’t make me stop?
Y’all might remember my supah fabulous buffalo chicken meatball sandwiches. They are amazing and I get emails quite often from ladies telling me that their husbands love them again. I’m saving marriages with those meatball sandwiches, you guys. I should probably get my marriage counseling certificate or something.
But, it’s getting warmer out and I know how you feel about turning the oven on, especially to 500 degrees, in the middle of summer. I don’t blame you. Let’s take this sandwich to the grill, shall we?
These sandwiches are super similar to the meatballs, except that they are formed into patties, grilled instead of baked, and then they’re topped with this crazy ranch coleslaw. I’m so in love with cabbage right now. I don’t know what’s wrong with me, either. Apparently I like vegetables. Someone alert the media!
The chicken stays nice and moist thanks to the hot sauce and ranch dressing and the flavor just pops!
Whip these up for dinner this summer. I insist.
The crispy, cool slaw just really makes these burgers. Drizzle it with a little extra hot sauce and you’ll have a super juicy and flavorful chicken burger recipe that the whole family will go nuts for!
Buffalo Chicken Burgers with Ranch Slaw
Yield: 4 burgers
Prep Time:10 minutes
Cook Time:12 minutes
Total Time:22 minutes
For the burgers:
1 pound ground chicken
2/3 cup panko
1/4 cup hot sauce
1 tablespoons ranch seasoning powder
1 tablespoon prepared ranch dressing
4 slices cheddar cheese
4 hamburger buns
For the slaw:
2 cups coleslaw mix
1/4 cup prepared ranch dressing
1 tablespoon ranch seasoning powder
In a large bowl, combine the chicken, panko, hot sauce, ranch powder, ranch dressing, and egg. Stir to combine thoroughly. Use your hands to form mixture into four patties.
Cook chicken patties on a preheated grill, six minutes per side or until chicken reaches 160 degrees. Top with sliced cheddar one to two minutes before removing from the grill.
To prepare the ranch slaw, mix together the coleslaw mix, ranch dressing, and ranch powder in a small bowl to combine.
Place the chicken patties on the sandwich buns, top with the ranch slaw, and drizzle with extra hot sauce, if desired.
