The new year is here, so I thought I’d pop in with one of my new favorite low carb casseroles! How many of you need some new keto recipes? How about new keto chicken recipes? I’m here for ya.
I don’t know about you, but I ate way too many Christmas cookies over the past month.
Friends and family kept dropping off plate after plate of cookies and treats. I loved every second of it. Until my pants started getting uncomfortably tight.
It’s time to get back on track for me. Exercise. Eating right. That sorta thing.
Ugh.
I love the keto diet, though I do struggle sticking with it. I go in spurts…a few weeks on, a few weeks off.
And okay, sometimes it’s more like a few months off. Who can relate?
Anyway, the biggest key for me staying keto is making foods that my whole family (the non-keto people) will like too. I don’t want to be cooking two dinners, you know?
This buffalo chicken casserole is one of those keto recipes that my whole family loves!
My cheeseburger casserole happens to be another one of those winning recipes, along with my chicken stuffed peppers, low carb meatloaf, and these buffalo chicken meatballs.
Keto has been gaining so much popularity lately. When I started it a couple years ago, it seemed like no one had ever heard of and everyone I told about it was super skeptical (and okay, even a little judgmental.) I’m glad to see it becoming more mainstream.

Low Carb Buffalo Chicken Casserole
Ingredients
- 2 1/2 cups cooked shredded chicken
- 4 tablespoons cream cheese softened
- 1/2 cup Frank’s Red Hot hot sauce
- 3 tablespoons ranch seasoning mix
- 4 large eggs
- 1/4 cup heavy cream
- 4 ounces grated cheddar
- 4 ounces grated mozzarella
- Ranch or blue cheese dressing and hot sauce for serving
Instructions
- Preheat oven to 350 degrees. Spray an 8x8 baking dish with non-stick spray.
- Add the chicken, cream cheese, hot sauce, and ranch mix to a mixing bowl and stir well to combine. Pour the chicken mixture into the prepared 8x8 baking dish.
- Add the eggs and heavy cream to a small bowl and whisk well to combine.
- Stir in the cheddar and mozzarella.
- Pour the egg mixture over the chicken.
- Bake for 30 minutes or until the eggs are set.
- Serve with a drizzle of ranch or blue cheese dressing and extra hot sauce, as desired.

I’ve never tried this in a microwave, so not sure how the eggs would turn out.

I love this recipe! I’ve made it a dozen times and love to make extra and freeze them in easy to go pieces for a quick lunch or dinner. I add blue cheese crumbles to the mixture, for a little extra. Either way this is one of my favorite go to recipes and so easy to make! Thanks for sharing!

Do you know if this recipe would work with almond milk, or with 1/2 the cream called for + some almond milk? We have sensitive stomachs in our home with cream!

We made this tonight since our kids our out and I doubled the recipe and used an entire stick of cream cheese for a 9×13 pan! Soooooo good if you like spicy food.

Made this today for dinner. Haven’t actually had dinner yet, but did get a taste (couldn’t help myself lol) while cutting it up for servings for tonight and the week. Absolutely delicious!! So glad I found your recipe, thanks! Can hardly wait for dinner now!! 🙂 I’ve been doing Atkins since the beginning of March and this will be perfect with just adding a veggie side. I’m also finding that I do better when my fat intake % is higher than my protein %, although I do tend to alternate so not really doing Keto. While this was in the oven, I was also thinking this recipe could easily be adapted to a Mexican type entree substituting the hot sauce for salsa and exchanging the ranch seasoning for taco or fajita seasoning. What do you think? Have you tried that?

Couldn’t decide at 1st whether to freeze 1/2 for another week or just eat it all week long. But, it’s soooo good I’m just having it for dinner all week 🙂 I’m a very picky eater so if I like something, I can eat the same thing everyday no problem lol! I’ll be making this tonight. My husband and I had a good run with Keto from August to Thanksgiving and then it all fell apart…. The struggle of cooking for a family while on Keto is REAL! I have made the cauliflower/buffalo chicken casserole a few times and although WE loved it one of my kids hates, loathes and abhors cauliflower and all of the Keto and cauliflower recipes didn’t go over well. Sigh. This one looks great though!

I am trying to adjust my whole family to eating low carb, even though I am the only official low carb-er. I have been searching for a Buffalo Chicken casserole type replacement, yay! I’m worried that my husband will be put off my so many eggs. Is it eggy tasting? Could I cut back to maybe only 2 eggs? Thanks!

I don’t think it tastes eggy at all. It just holds the mixture together. You could try reducing them, but it may not hold together very well.

I still haven’t tried it. The hubby was concerned about the eggs. BUT I can tell you that my MIL has made a very similar casserole, and it was not eggy at all.

I am new to the Keto diet. My husband is a runner and has been on the Adkins diet for EVER. I am not a runner, but i do need to loose weight and I do not have the will power to do the Adkins diet. After reading some of the recipes that you have posted and reading some of the recipes in other Keto cookbooks, I think I can stay on this diet because it looks so yummy. I have high blood pressure and high cholesterol, so I am very ready to see if this diet can help me.
