I will pretty much never turn down going out for Mexican. Chips and margs? Yes. Sign me up.
But, when we’re trying to be a little more budget-friendly or eat a little healthier, we tend to cook at home a bit more often and that’s where these Air Fryer Chicken Fajita Bowls come into play.
Busy nights were made for meals like this. Just 20 minutes, your air fryer, and the juiciest, most flavorful chicken + veggies ever.
My kids love these because we set out bowls of toppings (shredded cheese, sour cream, homemade guacamole, some restaurant style salsa…of course, on crazy nights store bought guac and salsa work just great) and let them build their own perfect bowl.

Ingredient Notes:

Chicken – We’re using boneless, skinless chicken breast for this but you could also use boneless chicken thighs if you prefer dark meat. The chicken will be sliced into strips before air frying.
Fajita Vegetables – Any color bell pepper will work here along with onion. We like sweet onion, but any variety will do.
Fajita Seasoning – We like Siete fajita seasoning mix. It’s got a bright citrus flavor and isn’t overly salty! You could also whip up your own mix.
White Rice – On crazy nights we start with the microwave pouches, but if we have a few extra minutes, our cilantro lime rice makes a great base.
Toppings – Some shredded cheese, sour cream, cilantro, and our homemade salsa are how we top these chicken fajita bowls. Sliced jalapenos are a good way to add a bit of spicy heat if you like that sort of thing. You could also bulk this up with our Instant Pot pinto beans.

Swaps & Tips
Don’t have fajita seasoning? Mix 1 teaspoon chili powder, 1 teaspoon salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon cumin, ½ teaspoon paprika, and a pinch of cracked pepper.
Make it spicier: Add a sliced jalapeño to the air fryer or use hot salsa as a topping.
Keep it low carb: Swap the white rice for our cilantro lime cauliflower rice and you have a simple low carb dinner.
Meal prep tip: Store the chicken and veggie mixture over rice and reheat in the microwave. Add your toppings after reheating.
Scaling for smaller households: This recipe easily cuts in half if you’re cooking for 1-2 people, or make the full batch for amazing leftovers all week.
Step by Step Instructions:

Add the chicken, bell peppers, and onion to a large mixing bowl and drizzle with the olive oil. Sprinkle on the fajita seasoning and salt and use your hands to toss it all together to coat in the seasoning.

Dump the mixture into the air fryer basket and air fry at 390 degrees for 15 minutes, stirring halfway through cooking.

Add ½ cup of rice to each serving dish and top with the chicken and vegetable mixture.

Serve with your favorite toppings, such as shredded cheese, sour cream, salsa, and guacamole.
Storage
- Refrigerator: Store leftovers in the fridge for up to 4-5 days
- Freezer: Freeze the chicken and veggie mixture (without rice) for up to 3 months
- Reheating: Microwave individual portions for 1-2 minutes until heated through
