Air Fryer Chicken Fajita Bowls

The air fryer makes these chicken fajita bowls a weeknight savior! Ready in about 20 minutes, easy to customize so the kids love them, and high in protein and packed with veggies. My family loves this meal. Leftovers make great meal prep, but you can halve this recipe if you want less.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs sliced into strips
  • 2 bell peppers any color, sliced into strips
  • 1 large onion sliced into strips
  • 2 tablespoons olive oil
  • 1 packet fajita seasoning
  • ½ teaspoon salt
  • 3 cups cooked white rice
  • toppings such as shredded cheese, sour cream, salsa, cilantro

Instructions

  • Add the chicken, bell peppers, and onion to a large mixing bowl and drizzle with the olive oil. Sprinkle on the fajita seasoning and salt and use your hands to toss it all together to coat in the seasoning.
  • Dump the mixture into the air fryer basket and air fry at 390 degrees for 15 minutes, stirring halfway through cooking.
  • Add ½ cup of rice to each serving dish and top with the chicken and vegetable mixture.
  • Serve with your favorite toppings, such as shredded cheese, sour cream, salsa, and guacamole.

Notes

We use Siete fajita seasoning. It has a bright, citrus flavor to it that I love. It’s not overly salty so we do add a bit of extra salt. If you’re using a different brand of fajita seasoning, it may not need the extra salt. You can always add it after cooking, to taste.
These are great for meal prep! Portion it all out in your favorite meal prep containers (I like these) and then just grab and reheat in the microwave when you’re ready for lunch.
You can bulk these up even more by warming up a can of pinto or black beans and adding it to the bowls. Season to taste - we like a little chili powder, cumin, salt, and pepper. Our Instant Pot pinto beans are great here, if you have the time.
Make it low carb by swapping the white rice for this cilantro lime cauliflower rice.
