Buffalo Chicken Pizza

Sometimes I can’t even stand my life.
I mean, how did I grow up to land this gig where I cook, photograph food, and write about it for a living? It’s so fabulous, I can barely handle it all.
I love cooking, I love photography, I love writing. My life, it is complete.
Then you throw in the amazing children and the sweet husband, and seriously, I’m so blessed I sometimes want to punch myself.
Did I mention this pizza? Well, it’s like this life-altering meal that will totally make you jealous of yourself. Has that ever happened to you? Things are so wonderful that you’re actually jealous of yourself? If not, prepare to feel that way when you take a bit out of this spicy, cheesy, ranch-y pizza. It’s ridic.
Buffalo Chicken PIzza
Yield: 8 slices pizza
Prep Time: 15 minutes
Cook Time: 10 minutes
Ingredients:
For the dough:
3/4 cup warm water
1/2 teaspoon active dry yeast
pinch of sugar
2 cups flour (bread or all purpose works well here)
3 tablespoons olive oil
Toppings:
4 ounces cream cheese
1 teaspoon Ranch dressing seasoning (the powder)
1 cup chopped, cooked chicken
1/2 cup Frank's Red Hot Sauce
8 ounces mozzarella, grated
Ranch dressing (prepared) for serving, if desired
Directions:
To make the dough:
To prepare the dough, place the warm water in the bowl of a stand mixer. Sprinkle the yeast on top and let bloom, about 10 minutes.
Add the flour, salt, and olive oil to the yeast mixture and turn the mixer (fitted with the dough hook) to medium. Knead until the dough comes together to form a smooth dough. Remove dough to an oiled bowl and place in the oven with the light turned on.
Let rise for one hour, or until doubled in bulk.
When the dough has doubled, punch it down.
Preheat the oven to 500 degrees.
Roll the dough out on a well floured surface to a 12 inch circle and place on a pizza stone or pan.
To prepare the pizza:
In a small saucepan over low heat, melt the cream cheese, stirring constantly to prevent it from burning on the bottom of the pan.
Once the cream cheese has melted, spread it evenly over the pizza crust and sprinkle with the ranch seasoning powder.
Sprinkle all but 1/4 cup of the cheese over the crust.
Toss the chicken with the hot sauce to coat and put the chunks of chicken evenly over the cheese.
Top with the remaining cheese.
Bake for 10 minutes or until the dough is golden and the cheese has melted.
Drizzle ranch dressing over the pizza before serving, if desired.

You’re funny. & this looks delicious. Happy Friday =)
So yeah, you are pretty lucky! And you have this pizza which is almost too show-offy
This looks fantastic! I am on Team Blue Cheese (friends are on Team Ranch, huge debate), gotta add some blue cheese.
Can this dough be made ahead of time, and stored in the refrigerator? If so, how far ahead? Thanks!!!
Ps this looks amazing, can’t wait to try it!!

Yep! Keep it in the fridge for up to a week. I haven’t tried freezing it, but I imagine that would work well too!
Its not often enough that someone can pursue what they really love to do–congrats! This pizza looks amazing!
Oh baby! I will eat buffalo chicken ANYTHING! I was going to make margherita pizza tonight but I think I’ve changed my mind lol.
Oh god, you’re killing me with all these buffalo chicken recipes, we had the meatballs the other night and they were amazing!! Now I have to make this as well!! Your pictures are stunning!
This looks great Karly! Never had this kind of pizza but it sure sounds good!
buff chicken pizza is one of my favorite kinds! I also love bbq chicken pizza.
OMG so good. I’m blessed to do what I love as well. Just a little longer until it can be my only full time job. Yay!
This pizza is TDF…I could seriously go for it right now!
My life WILL be complete once this pizza makes it way into my mouth! YUM.
Not a fan of buffalo chicken but I love your pictures!
My husband would do anything for me if I made this for him. So mouthwatering!
Ashley Arestad you sure can freeze pizza dough. Thaw it overnight in the fridge, then take it out about half an hour before you start to preheat your oven.
Karly,
YUM! In addition to the great job/great family/great fun, you also have amazing drizzling skills. The horseradish drizzle on my beet pizza a couple of weeks ago is so lame compared to this. I’ll cover its eyes so it doesn’t see this lovely looking drizzle and feel ashamed.
Nice pizza!
this looks incredible!! i love buffalo anything so this is right up my alley!
I often think this when a company sends me six pints of ice cream to review. I mean…seriously. How awesome is that.
This pizza is also pretty often. Buffalo sauce is my jam.
You are very lucky to have this pizza in your life!
Mmmm, love buffalo sauce on EVERYTHING. I don’t know if I could pick between blue cheese and ranch…if I had to probably blue cheese. Love the tangy creamy taste. This pizza sounds fantastic Karly!
This looks lovely!! I love any buffalo flavored!
Knockout flavors, I love this pizza!

My favorite combo! Buffalo chicken & pizza! And p.s. love your post, you made me smile!
I am right there with you…it is the best job in the world!!! And to do it from home and be available for our kids every day…best feeling ever!!! Buffalo chicken pizza is one of my favorites, but I have never had it with that ranch drizzle. I am so trying that next time!!!
Eek! I love buffalo chicken anything. This looks amazing!

Thanks for sharing!!
Looks yummy, Karly! Can’t wait to try it.
In list of ingredients, you listed pinch of sugar but in the directions there is no mention of sugar, instead you mentioned salt. Just wondering which one is it.
