I’m going to tell you guys something here. Bear with me. I know this will be shocking and confusing.
My husband and my children do not like sweet potatoes.
*gasp*
I don’t understand it either.
They’re basically candy that grows in the ground, but okay, whatever. More sweet potatoes for me!
When we make our air fryer baked potatoes for dinner, I usually make a regular potato for them and a sweet potato for me. Easy peasy!
Now I’ve discovered the absolute perfect goodness of Instant Pot sweet potatoes though. Soooo, I’ve been making 3-4 potatoes a week at once and then wrapping them in foil and popping them in the fridge. They’re perfect for reheating all week long.

My Favorite Instant Pot!
I absolutely love my Instant Pot! It’s great for recipes like these sweet potatoes, easy boiled eggs, to cook perfect rice, cook chicken to shred (the best!), and so much more.
How To ‘Bake’ Sweet Potatoes In The Instant Pot:
Prepare: This is just about the easiest method for sweet potatoes ever. Start by placing your trivet in the bottom of your Instant Pot along with a cup of water.
Sweet Potatoes: Wash your sweet potatoes well, poke ’em with a fork, and then place them in the Instant Pot on the trivet. You don’t want the potatoes to be touching the water or they’ll get mushy.
Pressure Cook: Set the vent to sealing to and then cook on high pressure for 17 minutes. Let the pressure release naturally – this should take about 10 minutes. If your sweet potatoes are very small, I would reduce the time to 15 minutes. If they are very large, I would increase the time to 19 minutes.
You can leave these in the Instant Pot using the ‘keep warm’ setting for an hour or so as well.
Serve: These pressure cooker sweet potatoes come out so fluffy and perfectly cooked and it’s so much faster than baking them in the oven!

Sweet Potato Toppings & Serving Suggestions:
I love these served up like a regular baked potato – split down the middle and topped with a bit of butter. Try mixing some butter and brown sugar, and maybe some cinnamon too for topping!
Marshmallow is another popular topping for sweet potatoes. Mini marshmallows work well, or marshmallow creme! Pop it under the broiler to caramelize for a minute.
Maple syrup or honey are also sweet toppings that’ll pair well!
You can remove the potatoes from the skin and mash them with milk and butter to make mashed sweet potatoes!
If you’re looking for a main dish to serve these sweet potatoes alongside my pork tenderloin would be an excellent choice!
FAQ’s:
Your leftover sweet potatoes will keep in the fridge for up to 5 days. Wrap them in foil or store in an airtight container for the best results.
I’ve found that 17 minutes with a 10 minute natural release for a medium size sweet potato is perfect for the Instant Pot. Extra large sized sweet potatoes may need to be cooked for a few minutes longer.

I would think that 5 minutes in the microwave would be faster and just as tasty. Just my thought.

I have done them in the microwave many times, but the texture cannot compare to making them using this IP method. Vastly superior. ย
