Our Rueben Sliders are a take on the classic sandwich with Hawaiian rolls instead of rye bread, plus a homemade Thousand Island dressing! Just about 10 minutes of prep and a quick run through the oven makes these buttery, soft sliders that are loaded with deli-sliced corned beef and sauerkraut.

If you’re a fan of classic Reuben sandwiches than you’re going to love these Reuben sandwich sliders!
We’ve swapped the rye bread, which is admittedly my least favorite part of a reuben, for soft, fluffy, and sweet Hawaiian rolls.
I know that’s probably breaking a major reuben rule but there’s something about a Hawaiian roll that makes me really not care.
The sweetness of Hawaiian rolls goes well with the corned beef, homemade Thousand Island Dressing, and the sauerkraut. Plus, we top the rolls off with a delightful mixture of melted butter, dried onion, and poppy seeds. You’ll be licking your fingers after every bite.
We keep these sandwiches easy by using deli-sliced corned beef. If you have leftover corned beef that you’ve made at home, just slice it up sandwich style and use that. It’s going to be delicious!!

- Flavors: Reuben sandwiches are known for their unique combination of flavors. The sauerkraut, corned beef, and Swiss cheese with the tangy Thousand Island dressing all work well together.
- Hawaiian Rolls: We’re mixing things up by swapping rye bread for the sweet, soft, goodness of Hawaiian rolls. All the other classic Reuben ingredients are there including Thousand Island dressing (homemade!), corned beef, Swiss cheese, and sauerkraut.
- Party Food: These sliders make excellent party appetizers! We serve them up at family gatherings or sporting events. They’re just the right size for a quick bite while you’re enjoying the game!
Ingredient Notes:
For the Thousand Island Dressing:
Mayonnaise – This simple homemade dressing starts with creamy mayonnaise as a base. We like Kraft mayo.
Ketchup – You’ll also need some ketchup for mixing with the mayo. I’m a Heinz girl, personally.
Sweet Pickle Relish – The sweetness in the relish pairs well with the sweet and tangy flavors in the ketchup. It also adds a little bit of crunch to the texture! Dill pickle relish could be used here instead if you prefer.
Lemon Juice – The acidity brightens up the colors and keeps the flavor fresh in the dressing. You can use freshly squeezed or bottled lemon juice here.
Double It!
If you love a saucy slider, double the dressing ingredients and serve some on the side for dipping!
For the Sliders:
Hawaiian Rolls – We love King’s Hawaiian rolls and use them for pretty much all of our slider recipes. Rye is traditionally used for Reuben sandwiches but we’re making an exception here.
Corned Beef – These Rueben sandwiches are topped with deli sliced corned beef! You can find this at pretty much any grocery store deli. Pastrami could also be used here instead of corned beef.
Swiss Cheese – Your local deli probably also has deli sliced cheeses, like Swiss cheese. That’ll probably offer the best flavor but any sliced Swiss cheese will work.
Sauerkraut – The sauerkraut is going to add a tangy, sour, crunch to your sliders. It’s a must! You’ll want to squeeze it dry to remove excess moisture.
For the Topping:
Butter – The topping we use for these Reuben sliders is real simple and it starts with melted, salted butter.
Poppy Seeds – You’ll mix some poppy seeds in with the butter. We love the flavor of the poppy seeds with the Hawaiian rolls! If you don’t like poppy seeds you can leave these out.
Dry Minced Onion – You can find this in the seasoning section of most grocery stores.

Step by Step Instructions for Reuben Sliders:
Prepare the Thousand Island dressing by whisking together the mayo, ketchup, pickle relish, and lemon juice.
While your oven preheats slice the rolls in half and spread the dressing evenly onto the bottom half of the rolls. Layer on corned beef and Swiss cheese, top with sauerkraut, then the top half of the rolls.
Combine the topping ingredients and brush the mixture onto the top of the rolls. Cover with foil and bake for 15 minutes. Remove foil and finish baking uncovered for 8-10 minutes.
When the cheese is melted and the tops are lightly toasted remove the Reuben sliders from the oven and cut the sliders. Serve them warm!
Helpful Tip!
Storage & Freezing:
You can keep leftover Reuben sliders stored in the refrigerator for about 3 days in an airtight container. They can be reheated in the microwave or the oven.
The sliders can also be frozen for up to a few months. Thaw overnight in the fridge or reheat from frozen in the oven.
Recipe FAQs:
Swiss is traditionally used for Reuben sandwiches but you can switch it up with a different cheese if you want. Provolone or mozzarella would make a good substitute for Swiss.
Yes, you can assemble the sliders according to the instructions and then simply store them in the fridge overnight. Add an extra 10 minutes to the bake time.

Reuben Sliders
Ingredients
For the Thousand Island Dressing:
- 1/4 cup mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons sweet pickle relish
- 1 tablespoon lemon juice
For the Sliders:
- 12 Hawaiian rolls
- 1/2 pound corned beef deli sliced
- 1/4 pound Swiss cheese deli sliced
- 1 cup sauerkraut
For the Topping:
- 2 tablespoons salted butter melted
- 1/2 teaspoon poppy seeds
- 1 teaspoon dry minced onion
Instructions
To make the dressing:
- Add the mayonnaise, ketchup, pickle relish, and lemon juice to a small bowl and whisk to combine.
To assemble the sliders:
- Preheat the oven to 350 degrees Fahrenheit. Slice the top half Hawaiian rolls off and set aside, place bottom half on a baking sheet.
- Spread the dressing evenly onto the bottom half of the Hawaiian rolls.
- Layer on the corned beef and Swiss cheese. Squeeze the sauerkraut dry (you can squeeze dry in your fist or with a paper towel) and distribute on top. Place the top half of the rolls on top.
To bake:
- In a small bowl, combine the melted butter, poppyseeds, and minced onion. Use a pastry brush to brush the butter mixture generously on top of the rolls. Cover with foil and bake for 15 minutes.
- Remove foil and bake for an additional 8-10 minutes, or until the cheese is melted and the tops are lightly toasted. Remove from the oven and carefully cut the sliders. Serve warm.
