There are plenty of reasons to love summer, even if it does only seem to last for about 3 minutes here in the Midwest. And, yes, most of those 3 minutes do happen to be spent complaining about the humidity. 😑
But, humidity aside, summer is pretty great. Slow mornings. Lazy days by the pool. Meals cooked out on the grill or just served up cold, because I’m not turning the oven on, absolutely not, have you lost your mind?
This chicken salad recipe with grapes (!!!) is one of those fav summer meals that is perfect on a hot day.
We use cold shredded chicken (perfect use for that Costco rotisserie chicken), a little mayo to give it richness, some celery and red onion for crunch, and then we take it over the top by stirring in buttery pecans and sweet red grapes.
Weirded out by fruit in your chicken salad? I was too, initially, but I’m a full convert now. I do love a good solidly savory version too though – like my dill pickle chicken salad.

Ingredient Notes:
Shredded Chicken – I’m using pre-cooked shredded chicken in this chicken salad recipe. I like to make a huge batch in the crockpot for meals like this, but this is also a great time to snag a rotisserie chicken from the store.

Grapes & Pecans – The sweetness of the grapes pairs so well with the savory flavors going on here and the pecans add a perfect buttery crunch.
Veggies – Some celery and red onion will add extra crunchy flavor to the salad.
Croissants – Totally optional, but highly recommended! White bread or toast also work great. A lettuce wrap or a fork is a great lower carb option.
How To Make This Chicken Salad Recipe With Grapes:
Shred the chicken, chop the onion and celery, and halve the grapes. Add it all to a mixing bowl with the rest of the ingredients.
Give everything a big stir, taste, and season with additional salt and pepper if you think it needs it. Chill until you’re ready to devour!

Like your chicken salad extra saucy? An extra dollop of mayo is easy to stir right in!

This chicken salad with grapes should last for about 4 to 5 days in a tightly sealed container in the refrigerator.
We like to give this at least an hour in the fridge for everything to reach the same temperature and to let the flavors all blend together. However, you can absolutely serve this right after mixing it together, but be sure to start with cold chicken.

Chicken Salad with Grapes and Pecans
Ingredients
- 2 cups cooked shredded chicken
- ½ – 2/3 cup mayonnaise
- ½ cup chopped celery
- ½ cup halved grapes
- 1/3 cup chopped pecans
- ¼ cup diced red onion
- 2 tablespoons minced parsley
- 1 teaspoon salt
- ½ teaspoon cracked pepper
- 4 Croissants
Instructions
- Add the chicken, 1/2 cup of mayonnaise, celery, grapes, pecans, onion, parsley, salt, and pepper to a mixing bowl and stir well to combine.
- Add additional mayonnaise if you’d like a wetter consistency.
- Store covered in the fridge for 1 hour to allow the flavors to meld before serving.
- Divide evenly between 4 croissants.

Any type of sweet, seedless grapes should be fine. We like red globe grapes.

I love chicken salad, and I put all your inuit I use walnuts instead of pecans and also add 1 apple. It is so delicious. I make it for my mother a lot. She uses bread and I use ritz crackers.
