Chicken Salad with Grapes and Pecans

This chicken salad recipe with grapes is the perfect amount of sweet and crunch! We love it on a croissant for lunch.

Ingredients

  • 2 cups cooked shredded chicken
  • ½ - 2/3 cup mayonnaise
  • ½ cup chopped celery
  • ½ cup halved grapes
  • 1/3 cup chopped pecans
  • ¼ cup diced red onion
  • 2 tablespoons minced parsley
  • 1 teaspoon salt
  • ½ teaspoon cracked pepper
  • 4 Croissants

Instructions

  • Add the chicken, 1/2 cup of mayonnaise, celery, grapes, pecans, onion, parsley, salt, and pepper to a mixing bowl and stir well to combine.
  • Add additional mayonnaise if you'd like a wetter consistency. 
  • Store covered in the fridge for 1 hour to allow the flavors to meld before serving.
  • Divide evenly between 4 croissants.

Storage: Store leftovers in the fridge, tightly covered, for up to 5 days. This one is perfect for meal prep!
Mayo: Not a fan of mayo? Try our Greek yogurt chicken salad instead. Super similar to this recipe but no mayo! 
Serving: Huge fan of croissants, but this is also delicious on white bread, toast, as a dip for crackers, and yes - even just eaten plain with a fork!
