I have a new found love in my life – sambal oelek! I’m always looking for new ways to use this chili paste and I think this is one of my new favorite easy dip recipes.

Once upon a time, I was just a girl.
A girl who was in the midst of a serious love affair with a bag or four of potato chips.
The crunchy kind. And sometimes the ridgy kind. Also the whole grain kind. Sometimes even kind with the sour cream and onion powder.
Clearly, I was a girl who could not commit. I got around when it came to potato chips.
Aaaaand, let’s not even talk about what happened when you got me around a dip. Oh, Lordy. I love a good dip.
My dill pickle dip is sometimes eaten with a fork. My best spinach artichoke dip is life. I could bathe in my white queso dip.
I like chips and dip. Obvi.
So, one day I was sitting around, being completely lazy, and ignoring my kids demands for dinner. As the kids got louder and screechier, I finally climbed up off the couch and wandered into the kitchen.
There was nothing in there, you guys. It was a sad sight.
I snagged a bag of chips, some sour cream, and a jar of sambal oelek. The kids were not impressed. But, then I mixed the sour cream and sambal and it was just divine.
You can use a chili garlic paste instead of the sambal, but I highly recommend the sambal. I much prefer it’s fresh, clean flavor without the garlic. I love garlic as much as the next girl, but I’m just not a fan of it in my chili paste. And, yeah, that means that sriracha isn’t my favorite hot sauce either. Don’t stone me to death over that, k?
So, if you’ve never tried sambal, you can snag a little jar from Amazon. It’s delicious spread on eggs, in my bacon fried rice, or mixed with mayo and spread on a burger. My kids were pretty happy to eat it for dinner as a chip dip, though. I totally gave them an apple, too. Super healthy like that, you know.
Sour Cream Sambal Dip
Ingredients
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup sambal oelek more or less to taste
- Chips or vegetables for dipping
Instructions
- In a small bowl, combine the sour cream and sambal oelek until well combined.
- Taste and add more sour cream if the dip is too spicy or add more sambal if the dip is not spicy enough.
- Serve with chips and vegetables for dipping.

I LOOOVVEE a good spicy dip, especially when paired with salty chips. Especially the ridges kind…those are the best, undoubtedly.

What does oelek taste like? It certainly looks good and so simple.

I’ve never had sambal oelek. This need to be fixed asap, cuz I want that dip! With a bag of chips, of course! ๐

I used to be anti sour cream? Can you believe it? This dip looks perfect for watching the Buffalo Bills loose (Actually, they won yesterday!). But it’ll perk me right up.
