These S’mores Bars are ooey gooey good! They start with a graham cracker cookie base and are filled with marshmallow fluff and Nutella! All of the s’mores goodness, none of the campfire drama.

Just in case I haven’t already made it clear that I love a good s’mores situation, I present to you these s’mores bars.

No campfire needed!
These s’mores bars have all the ooey-gooey goodness of traditional s’mores but in easy bar form – soft graham cracker cookie base, melty marshmallow fluff, and rich Nutella (!!!) all baked together. Perfect for when you’re craving s’mores but don’t have a fire pit handy!
I mean, I love s’mores, but also, they’re kind of a pain. The marshmallows catch fire in the most dramatic way, the chocolate doesn’t melt quite right, and someone always burns their fingers trying to assemble everything while it’s hot.
Meanwhile, I’m over here like “there has got to be a better way to get this deliciousness into my mouth.”
Turns out, there is.
These s’mores bars start with a soft graham cracker cookie base (hello, graham cracker cookies) that’s actually better than plain graham crackers could ever be. Then you get a layer of marshmallow fluff and Nutella (which is chocolate x 10), and finally another layer of that amazing cookie dough on top.
S’mores. For people that don’t have campfires.

- Cutting cleanly: Let them cool completely and use a sharp knife wiped clean between cuts.
The key to perfect s’mores bars is not overbaking them. They should be golden brown but still look slightly underdone in the center – they’ll finish cooking as they cool and stay perfectly chewy.

S’mores Bars
Ingredients
- 1/2 cup butter room temperature
- 1 cup brown sugar
- 2 teaspoons vanilla
- 1 large egg
- 1 1/2 cups graham cracker crumbs
- 3/4 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup marshmallow fluff
- 1/3 cup Nutella
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream together the butter and sugar with an electric mixer. Beat in the vanilla and egg until well combined.
- In a medium bowl, combine the graham cracker crumbs, flour, baking soda, and salt. Add to the butter mixture and mix until just combined.
- Press half of the dough into a parchment lined 8×8 baking dish.
- Spread dough with Fluff and Nutella.
- Press small pieces of the remaining dough on top of the Fluff and Nutella to form the top crust.
- Bake for 20-25 minutes or until golden brown.
- Cool completely before cutting.

This receipe looks really good but I don’t understand why you have pieces of chocolate in the picture but you don’t list pieces of chocolate in the receipe just Nutella.

Nutella has chocolate in it – just using the chocolate bits to show that the recipe includes chocolate.

Any suggestions for a substitute for Nutella? I love it but my daughter is severely allergic to nuts.

Chocolate chips or Hershey’s bars would be great! Just put down a single layer in place of the Nutella.

I made these for my son to take on his camping trip. I used a disposable pan so he didn’t have to bring it back but he did anyway lol. But empty! He said everyone loved them. Still have not made them again but I MUST! They are pretty easy to make except for the top. You have to either roll it out and piece it on top or put it on piece by piece.
