These slow cooker baked beans are tender, tangy, and exactly what you need at your next get-together! I used leftover ham in this crock pot baked bean recipe, making it a perfect way to use up leftovers – of course, bacon works just as well!
Would you like to save this?
Can we talk about ham?
I’m pretty obsessed with it. Most people only seem to make it for Christmas and Easter, which I totally don’t get. I mean, yes, it can be a little bit pricey, but if you factor in all of the leftovers you’ll probably get from that big hunk of ham, it works out to be quite reasonable.
Also, hello, cook once, eat five hundred times. That’s winning. I mean, use the leftovers for my hot ham and cheese dip or my ham and cheese potato pancakes and you’re living life right.
We always do a boneless ham and it’s so stinkin’ easy to cook. I love it. Toss it in the oven and walk away, friends.
Anyway, we’re all about to have gobs of leftover Christmas ham (HALLELUJAH!), so I thought I’d come up with a crazy way to use a bit of it up. This isn’t your usual ham salad or ham sandwich or ham whatever. This is slow cooker baked beans loaded with big chunks of ham, coated in a sweet and tangy sauce, and served over baked sweet potatoes. Can your life even get better than this? No, it can not.
I teamed up with Hurst’s Beans to bring you this recipe. I used their bag of Slow Cooker Bacon and Beans for this recipe. It’s a mixture of Pinto and Great Northern beans. Aaaaand inside the bag comes this little seasoning packet full of smoky seasoning goodness.
You can find these beans with the rest of the dried beans at your local grocery store.
This is a crock pot baked bean recipe, which means that it’s super simple and basically you just toss things together and walk away. Love.
An hour before the beans are done, you pop your sweet potatoes in the oven to roast. Now, yes, you can totally use Idaho potatoes instead, but I really dig the flavor the sweet potatoes in this recipe. This beans are sweet, but tangy and the potatoes are sweet, but earthy. It pairs well and isn’t too overwhelmingly sweet. Sprinkle with salt and it just comes together really nicely.
These come together just as easily and deliciously as the Green Chile Pulled Pork and Pintos and the Beef Burrito Dip that I created for Hurst’s earlier in the year, too! I love easy crock pot recipes like this. 🙂
