It’s an easy garlic salad dressing, but gosh, does it pack a punch.

This is a zesty, tangy Italian-style dressing with a bold garlic bite.

- Fresh garlic is best. It’s got a stronger flavor than jarred garlic or a tube of garlic paste. If you want a more mild flavor, you can use jarred.
- Mayo swap. Greek yogurt works if you want it lighter and tangier!
- Cheese swap. Try Pecorino Romano for a saltier bite. Otherwise, freshly grated Parmesan is perfect here.
- Tangy flavors. More lemon juice or red wine vinegar for a zippier taste, or less if you don’t want it as zesty.

Easy Garlic Dressing
Ingredients
- 6 fat cloves garlic
- 2 tablespoons mayonnaise
- 2 tablespoons red wine vinegar
- 1 lemon
- 1 teaspoon dijon mustard
- 1/3 cup olive oil
- 1/2 teaspoon dried oregano
- 2 tablespoons freshly grated Parmesan
- Salt and fresh cracked pepper
Instructions
- Mince the garlic finely and sprinkle with a bit of coarse salt. Use the back of your knife to smash the garlic into a paste, pressing the knife into the garlic and dragging it towards you repeatedly until you have a soft paste.
- Add the garlic to a small mixing bowl with the mayonnaise and vinegar. Squeeze the lemon into the bowl and add the dijon mustard. Whisk well to combine.
- Add the olive oil, oregano, and Parmesan and whisk again until smooth and creamy.
- Taste and season with salt and pepper to taste. Add more olive oil to mellow out the tang, or more lemon juice or vinegar to add more tang.
