This easy garlic dressing is for serious garlic lovers only. Maybe not the best choice for date night (hello, garlic breath), but bold, tangy, creamy, and just honestly the perfect choice for someone that really loves that bite of fresh garlic!
Mince the garlic finely and sprinkle with a bit of coarse salt. Use the back of your knife to smash the garlic into a paste, pressing the knife into the garlic and dragging it towards you repeatedly until you have a soft paste.
Add the garlic to a small mixing bowl with the mayonnaise and vinegar. Squeeze the lemon into the bowl and add the dijon mustard. Whisk well to combine.
Add the olive oil, oregano, and Parmesan and whisk again until smooth and creamy.
Taste and season with salt and pepper to taste. Add more olive oil to mellow out the tang, or more lemon juice or vinegar to add more tang.

I don't want to understate the garlic flavor here. This one packs a punch. If you're in less of a love affair with garlic than I am, you can start with 4 cloves of garlic and go from there. We really prefer to use fresh garlic for the best flavor here. You can try squeezing in garlic paste from a tube, but it won't have quite the same punch as fresh garlic.Keep in mind raw garlic has a bit of a spicy bite to it. Turning it into a paste does help mellow it out a bit, but this will still have a little bite. We find it delicious and fresh and just so, so flavorful.
