These peanut butter pancakes are topped with a homemade chocolate syrup and chopped up peanut butter cups for a decadent dessert that is ready in 15 minutes!

Can we talk for like, 2 seconds, about my husband and how he is basically asking me to smother him in his sleep?
You guys. That man. Ugh.
We have three pillows on our bed. Mine is a king sized, lovely down pillow. It goes under my head. Then we have a standard sized, older down pillow that isn’t quite as fluffy and I spoon it all night. Then we have my husband’s awful king sized lumpy pillow that cost less than $10 from Walmart, but I can’t even feel bad because he picked it out himself and I told him that it was a bad pillow. He was warned and he still made the choice.
So, he goes to bed before me and some nights all is well when I come in the room. (Some nights the foot corner is by my head.) Other times, he’s cuddling my pillow.
I start off with a big sigh and then convince myself that it will allllll be okay. I can sleep without hugging a pillow for one night, I’m not a child. After all, I love the man. He works so hard and he must be exhausted and I wouldn’t dream of waking him up to take back my pillow.
Then I start passive-aggressively thinking about how in the morning when my husband asks me if I slept well, I’ll say NO. That will teach him, for sure.
Soon after that I get a bit more aggressive than passive and start fake sleep flailing around in the hopes that my movement will wake him up and/or break his nose. It never does.
Finally, I realize that I don’t care how exhausted he must be. If he’d just fall asleep with his one pillow instead of his pillow and my pillow, then he’d be able to sleep just fine. After all, I’ve offered to buy him an extra pillow or a better pillow many times and he always says no. This is not fair and it’s time to right the wrong he has done to me.
I violently poke him in the shoulder and as he stirs, I yank the pillow out from under him and hiss, “miiiiiiine.”
I’m a treasure and he loves me.
Anyway, it’s pretty obvious that in order to keep the man around, I have to shower him with treats. I mean, hello. I’m kind of insane at bedtime.
So, when I was writing my book, I went ahead and included one of our favorite candies – peanut butter cups!
You could totally make these pancakes for breakfast, but you know, don’t tell your mom. She’d yell at you for sure.

These pancakes are packed with peanut butter, topped with chocolate syrup, and then sprinkled with chopped up candy. I mean, whut? Can you even?

Peanut Butter Cup Pancakes
Ingredients
- 1 cup flour
- 2 Tbsp. sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 1/4 cup buttermilk
- 1 large egg beaten
- 1/3 cup creamy peanut butter
- 1/2 cup mini chocolate peanut butter cups chopped into small pieces
- Chocolate syrup for serving
- Whipped cream for serving
Instructions
- Heat a large skillet or griddle over medium heat.
- In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk to combine.
- In a small bowl, mix together the buttermilk, egg, and peanut butter.
- Stir the wet ingredients into the dry ingredients until combined, but still slightly lumpy.
- Spray your cooking surface with non-stick cooking spray and place ¼ cup of the pancake batter in the pan.
- The batter is very thick and will need spread a bit with the back of a spoon, spatula, or your ¼ cup measure.
- Sprinkle immediately with a few pieces of chopped peanut butter cups. Use a spoon to spread a bit of the batter over the candy pieces. Cook for 3 minutes per side or until cooked through. Repeat with remaining pancakes.
- Top with whipped cream, chocolate syrup, and more candy pieces.

When I read about the pillow incident..I had to laugh as we have 4 pillows on the bed and he insists on stealing my pillows because they smell good and mine are always fluffed up and his aren’t ! LOL
May have to try the pancake idea, but with my girlfriends as hubs is a diabetic .. Thanks for the recipe.

I made these pancakes for breakfast this morning, and they are terrific! I couldn’t bring myself to sprinkle on the peanut butter cups; the chocolate syrup and whipped cream were plenty decadent. (Actually, my husband enjoyed his with butter and maple syrup.)
I purchased the Easy Whisk you recommended in a recent post. It worked great for mixing up the peanut butter/buttermilk/egg mixture. Thanks for that tip!

And I feel you on the sleep-time battles. My guy sleeps with not one, not two, but THREE pillows. I usually wake up 1-2 times during the night because he’s lost track of one and it’s somehow laying on my back or smothering my face. But I’ll deal with it as long as he doesn’t untuck the covers on the foot of my side of the bed. Those covers can NEVER be untucked. And if he ever wants to see pancakes like this, he had best keep it that way!

I’m so thankful hubby has his own snuggling pillow. I would have no choice but to fight him in his sleep if he took mine, ha! But then I’d of course make up for it with this huge stack of pancakes. These look phenomenal!

I’m seriously so glad I’m not the only one who needs to snuggle a pillow. My husband generally hates sleeping with a pillow, so when I come to bed and he’s snuggling my body pillow (yes, I have a body pillow. you should too) I yank it out of his arms and all is right with the world again. HAHA! These pancakes look absolutely delicious! My dream flavor combo right there!

Too funny! This sounds like something that would happen with my husband and myself. And the idea of pancakes for dessert is a great one. I love breakfast food, but rarely eat breakfast. So this is perfect!
