Peanut Butter & Nutella Sandwich Cookies

We all love a good sandwich, right?

Personally, I like turkey and cheese on white bread with a little mayo. I also love me a BLT with a couple slices of avocado. Clearly, I’m all about the classics.

The best kind of sandwiches, though, are the sweet kind. Obviously.

Peanut butter and Nutella sandwiches rock my world, but let’s face it. We could make the classic PB&N even better by turning it into a cookie. I mean, duh. You like a food? Turn it into a cookie and you’ll like it more. It’s just the  way the world works.

Peanut Butter & Nutella Sandwich Cookies

Peanut Butter & Nutella Sandwich Cookies


  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1 cup quick cooking oats
  • Nutella, probably about half a cup, but that's a total guess (sorry - bad blogger)


  1. Pre-heat the oven to 350 degrees.
  2. Begin by creaming the butters and sugars for the cookies. Beat in the egg and vanilla.
  3. In a small bowl mix together your flour, baking soda, baking powder, and salt. Mix into the creamed butter and sugars.
  4. Mix in the oats and stir until combined.
  5. Drop teaspoonfuls (or use a small cookie scoop) of dough onto a parchment lined baking sheet. Make a criss cross with a fork to flatten the cookies.
  6. Bake for 10 minutes and allow to cool.
  7. When cookies are completely cooled, flip half of them over. Spread with a spoonful of Nutella (how much you use is totally up to you) and then top with the remaining cookies.

    The directions refer to mixing together butter and sugars (plural) but the ingredients list shows white sugar only. Is there brown sugar in the cookies and if so, how much?

    Good catch! There should also be a 1/2 cup of brown sugar. :)

      Thinking about making these and do a lot of my Christmas baking ahead of time. Can these be frozen – have you ever done that and how long would you say they could keep nicely (keep well) in the freezer before eating? Thank you Pam

        I’ve never tried freezing them and I’m not sure how the fluff would do once it defrosts. Might get a funky texture, but I can’t say for sure.

    These cookies are AMAZING!! They turned out perfectly brown and deliciously moist. Brought them to a family party and they were gone as soon as I put the platter down on the table. Making a double batch again today! :)

    I was curious if you ever considered changing
