It’s time to get serious about the holiday baking plan. It’s time to hunker down on the couch, under a cozy blanket, wearing footie pajamas, while the snow swirls around out your prettily frosted window. It’s time to buy all the presents ever. (<—Please tell Santa that this is what I really want this year, k?)
Of course, while you’re doing all those things, you need something to eat. Something chocolatey and rich. Something bright and cheery.
You need this fudge, people. I can’t even begin to describe it to you. Imma try anyway.
Here’s what I love about this easy chocolate fudge recipe:
The fudge is thick and creamy and can be made with dark, semisweet, or milk chocolate depending on your preferences. I went for a semisweet fudge and holy cow is it ever good when paired with the tart, tangy, juicy pomegranate seeds. The added texture from the seeds is really great in the soft fudge, too. It takes just three ingredients and less than 5 minutes of hands on time.
I would venture to guess that even if you’re not a big pomegranate lover, you will like this fudge. The juicy little arils add the perfect little burst of tartness to cut all the richness of the chocolate. It’s kind of dangerous, because usually you stop after a little piece of fudge because it’s overly rich and sweet. There’s nothing stopping you with this fudge! You can eat it all day long and you’ll just want more more more.
Did I mention how hard people think fudge is to make? Not this recipe. And then when you get all fancy with the pomegranate? People will think you’re some kind of baking superstar, but really you just grabbed three ingredients and stirred them together. You got this.

If you’re really busy this year, just grab the little cup full of arils in the produce section at the grocery store and stir them right in. Shortcuts are good this time of year!
1 can (14 ounces) sweetened condensed milk
3 cups chocolate chips (any variety, depending on how sweet you want your fudge)
arils of 1 pomegranate, about 1 cup
Line a 9x9 pan with plastic wrap.
In a small sauce pan, heat the sweetened condensed milk and chocolate chips together, stirring constantly, until the chocolate has melted and mixture is smooth. Remove from the heat and gently fold in all but 1/4 cup of the arils.
Pour mixture into the prepared pan and smooth the top. Gently press the remaining arils into the top of the fudge.
Refrigerate for at least 2 hours before cutting and serving.
Store in the refrigerator for up to 1 week.
