Tortellini Alfredo

Such a simple dinner with an amazing Alfredo sauce! Use whichever variety of tortellini you prefer.

Ingredients

  • 16-20 ounces frozen or regrigerated tortellini any variety
  • 1/2 cup butter
  • 1 cup heavy cream
  • 2 cloves garlic minced
  • 2 cups shredded Parmesan
  • 1 tablespoon chopped parsley
  • salt and pepper to taste

Instructions

  • Cook the tortellini according to package directions. 
  • While tortellini is cooking, prepare the Alfredo sauce.  Add the butter to a small saucepan and melt over low heat.
  • Whisk in the heavy cream and garlic until heated through. 
  • Remove from heat and whisk in the Parmesan cheese until smooth and creamy. Season with salt and pepper, as desired.
  • Drain the tortellini and add to a bowl with the Alfredo sauce. Stir to coat the pasta. Sprinkle with parsley and serve.

Notes

You can use any variety of tortellini that you prefer. I usually buy the refrigerated cheese filled tortellini, but frozen works just as well,
This also works well with ravioli, if that's what you have on hand. 
Do not use the green shaker can of Parmesan for this one. I buy bags of shredded Parmesan and it works great here.
