When you need a hearty dinner that makes everyone happy, this is it. Spicy Italian sausage, cheesy tortellini, and vegetables all simmered together in one pot. Ready in 45 minutes with ingredients you actually have on hand. Kid-approved comfort food!
Heat a dutch oven over medium heat. Add the sausage and begin to brown, breaking it up as it cooks.
When sausage is about halfway cooked, add the onion, carrots, and garlic to the pot. Continue cooking and stirring until sausage is cooked through. Drain the fat if needed.
Add the beef broth, diced tomatoes, tomato sauce, Italian seasoning, and salt to the pot and stir well. Bring to a boil, reduce to a simmer, and cook for 20 minutes.
Add the tortellini to the pot and cook for 10-12 minutes or until the pasta is cooked to your liking.
Stir in the parsley just before serving.

Sausage: Use sweet or mild Italian sausage if you don't like the spice. You can also swap in Italian turkey sausage to make this a bit lighter. Tortellini: If you're using fresh tortellini in place of frozen, just adjust the cook time a bit to suit the package instructions. Extra Veg: This soup is great with a couple handfuls of fresh spinach stirred in at the end of the cooking. It'll wilt right down, doesn't change the flavor, and adds a little veggie boost.
