Chocolate Peanut Butter Cookies
These cookies are so thick and chewy and they're everyone's favorite flavor combo - chocolate and peanut butter!
Servings 9 large cookies
- 8 tablespoons butter melted
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 2 teaspoons vanilla
- 1 egg
- 1 1/2 cups flour
- 1/3 cup cocoa powder
- 1 teaspoon espresso powder optional but recommended
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup peanut butter chips
Preheat oven to 350 degrees.
Beat together the butter and sugars until well combined.
Beat in the egg and vanilla until just combined.
Add the flour, cocoa powder, espresso powder, baking soda, and salt and beat until a soft dough forms.
Stir in the peanut butter chips.
Portion the dough into 9 equal pieces and roll into balls.
Place dough balls on ungreased cookie sheet and bake for 11 minutes exactly. Cookies will look slightly underdone, but will firm up as they cool.
Cool for 5 minutes on the pan before removing to a cooling rack.
