Chocolate Peanut Butter Cookies

These cookies are so thick and chewy and they're everyone's favorite flavor combo - chocolate and peanut butter!

Ingredients

  • 8 tablespoons butter melted
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 2 teaspoons vanilla
  • 1 large egg
  • 1 1/2 cups flour
  • 1/3 cup cocoa powder
  • 1 teaspoon espresso powder optional but recommended
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup peanut butter chips
  • 1/4 cup milk chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Beat together the butter and sugars until well combined.
  • Beat in the egg and vanilla until just combined.
  • Add the flour, cocoa powder, espresso powder, baking soda, and salt and beat until a soft dough forms.
  • Stir in the peanut butter and chocolate chips.
  • Use a large cookie scoop to scoop out 12 balls of cookie dough.
  • Place dough on ungreased cookie sheet and bake for 11 minutes exactly. Cookies will look slightly underdone, but will firm up as they cool.
  • Cool for 5 minutes on the pan before removing to a cooling rack.

For smaller cookies, use a medium cookie scoop and bake for 9 minutes.
