You're going to love how simple these are to make. Even my non-sweet-potato-lovers enjoyed this recipe. I think it has something to do with the maple and the bacon. I mean, duh.
Preheat the oven to 425 degrees. Line a rimmed baking sheet with foil or spray with non-stick spray.
Peel and wash the potatoes and dice into bite sized pieces. Place the potatoes in a bowl and drizzle with the maple syrup and olive oil. Sprinkle on the salt and pepper and toss to coat.
Arrange the sweet potatoes in an even layer on the prepared baking sheet and bake for 30-35 minutes, stirring every 10 minutes.
Sprinkle the bacon on top during the last 5 minutes of baking. Remove from the oven and garnish with parsley.
Notes
Potatoes: You don't have to peel the potatoes if you don't want to, but we do prefer these peeled.Bacon: The bacon is completely optional, but we love the salty bite it adds. You can leave it out entirely or swap it for halved pecans for a vegetarian version.Spice: Add in a sprinkle of cinnamon or a dash of cayenne to spice these up, if desired.
