Maple Bacon Sweet Potatoes

You're going to love how simple these are to make. Even my non-sweet-potato-lovers enjoyed this recipe. I think it has something to do with the maple and the bacon. I mean, duh.

Ingredients

  • 3 large sweet potatoes
  • 2 tablespoons pure maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon cracked pepper
  • 3 slices bacon fried and chopped
  • fresh parsley for garnish

Instructions

  • Preheat the oven to 425 degrees. Line a rimmed baking sheet with foil or spray with non-stick spray.
  • Peel and wash the potatoes and dice into bite sized pieces. Place the potatoes in a bowl and drizzle with the maple syrup and olive oil. Sprinkle on the salt and pepper and toss to coat.
  • Arrange the sweet potatoes in an even layer on the prepared baking sheet and bake for 30-35 minutes, stirring every 10 minutes.
  • Sprinkle the bacon on top during the last 5 minutes of baking. Remove from the oven and garnish with parsley.

Notes

Potatoes: You don't have to peel the potatoes if you don't want to, but we do prefer these peeled.
Bacon: The bacon is completely optional, but we love the salty bite it adds. You can leave it out entirely or swap it for halved pecans for a vegetarian version.
Spice: Add in a sprinkle of cinnamon or a dash of cayenne to spice these up, if desired.
