Baked Gnocchi Casserole

This gnocchi casserole is rich and flavorful thanks to the combo of ground beef, pork, and red sauce. We top it off with fresh mozzarella.

Ingredients

  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 28 ounces canned crushed tomatoes
  • 1 tablespoon Italian seasoning
  • 1 tablespoon tomato paste
  • 2 teaspoons salt
  • 1/8 teaspoon red pepper flakes
  • 1/8 teaspoon sugar
  • 16 ounces dried potato gnocchi
  • 6 slices fresh mozzarella
  • 1/2 teaspoon Dried Parsley

Instructions

  • Preheat the oven to 350°F.
  • Add the beef and pork to a large skillet over medium heat. Break up the meat a bit and add the onion and garlic to the skillet and continue cooking, stirring often until the meat is fully browned and the onion is translucent.
  • Stir in the crushed tomatoes, Italian seasoning, tomato paste, salt, red pepper flakes, and sugar. Cook for 15 minutes over medium-low heat, stirring occasionally.
  • While the sauce is cooking, bring a large pot of water to a boil and cook the gnocchi according to package instructions. Drain and add to the pot of sauce. Gently toss to coat.
  • Transfer to a 1 1/2 quart baking dish and top with the mozzarella slices and parsley.
  • Bake for 10 minutes.
  • Serve immediately.

Notes

You can use all beef or all pork, if preferred. Italian sausage would work well here too.
You can easily swap the fresh mozzarella slices for a sprinkle of shredded mozzarella.
