Chocolate Chip Cake Mix Muffins

These muffins are incredibly easy to make, with just 5 ingredients needed. They have that amazing bakery style taste, but without the effort. Soft and fluffy, filled with chocolate chips, and so simple!

Ingredients

  • 2/3 cup milk
  • 1/3 cup oil
  • 2 large eggs
  • 15 ounces white cake mix
  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 350. Line muffin tin with paper liners.
  • Add the milk, oil and eggs to a large mixing bowl. Stir until well combined. Add the cake mix and mix until just combined (the mixture may still look a little lumpy). Fold in the chocolate chips.
  • Fill the muffin tins about 2/3 of the way full. Dot the tops with extra chocolate chips, if desired.
  • Bake for 20 minutes, or until lightly golden and a tester comes out mostly clean.
  • Cool the muffins in the tin for 5 minutes, before transferring to a cooling rack to cool completely.

Notes

The muffins can be sprinkled with a few extra chocolate chips before baking.
While white cake mix was used in this recipe, this recipe will also work with any flavored cake mix. 
Substitute the chocolate chips for fresh, frozen or dried fruit or even sprinkles. 
Enjoy these muffins still slightly warm or completely cooled, they taste amazing both ways. 
Take care not to over-mix the muffin batter. Mixing the batter until only just combined will help the muffins bake light and fluffy.
