It just takes 4 ingredients to make an incredibly creamy, cheesy Ro*Tel dip with big, bold flavors. This is perfect for football games or to serve up at Taco Tuesday.
Add the beef to the skillet and cook until browned, breaking up the meat as it cooks.
When the beef is cooked through, drain the grease.
Add the taco seasoning and ¼ cup of water to the beef and stir to combine.
Cut the Velveeta into cubes and add to the skillet with the beef.
Add the Ro*Tel (do not drain) to the skillet and stir to combine.
Cook over low heat, stirring constantly, until the cheese has melted.
Serve immediately or transfer to a slow cooker to keep warm.

This can also be made directly in the slow cooker. Brown the beef in a skillet and then transfer to a slow cooker with the remaining ingredients. Cover and cook on low for 1 hour or until the Velveeta melts and the dip easily stirs together. Sprinkle with green onions or cilantro before serving, if desired.
