Easier than buffalo wings, but just as tasty! These buffalo chicken meatballs make a great appetizer or snack, but they're also good as a main dish. We cut out the breadcrumbs for almond flour to keep these a bit healthier and low carb.

Notes
The meatball mixture will be quite moist, but should roll into a ball nicely. If the mixture is too wet, add additional almond flour OR grated Parmesan cheese (to avoid adding additional carbs from the almond flour) one tablespoon at a time until the mixture is easy to handle. Ground turkey works just as well as a ground chicken and we can't tell a difference in flavor. We grab whatever is on sale.We use Frank's Red Hot Sauce, but Frank's Buffalo Sauce also works well. The buffalo sauce is less spicy than the straight hot sauce. Blue cheese dressing may be substituted for ranch.
