Red Velvet Gooey Butter Cookies

These red velvet cookies start with a cake mix, making them super quick and easy to prepare! The soft dough makes for a delicious cookie!

Ingredients

  • 1 box Red Velvet cake mix 13-15 ounces
  • 8 ounces cream cheese room temperature
  • 1/2 cup butter room temperature
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 1/2 cups white chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Beat together the cream cheese and butter until well combined. Beat in the egg and vanilla. Add the cake mix and beat until well combined. Stir in the chocolate chips.
  • Use a medium cookie scoop (about 1 1/2 tablespoons) to scoop balls of dough and place on a parchment lined baking sheet.
  • Bake for 10 - 12 minutes or until the top is set, but the center is still gooey.
  • After baking immediately press additional white chocolate chips on top of the cookies, if desired. Cool on a wire rack.

You can use any flavor of cake mix for this recipe.
We love the look of the white chocolate chips with the red cookies, but dark chocolate chips are delicious here too.
Cake mix sizes fluctuate quite a bit. This recipe should work well with a cake mix size between 13-15 ounces, but the total number of cookies you get may vary a bit.
