This Mediterranean grilled chicken is marinated in a bright lemon, garlic, and fresh herb mixture and grills up juicy and flavorful in just about 12 minutes. Fresh dill, oregano, and parsley bring big flavor with minimal effort, making it a perfect weeknight dinner or weekend cookout staple.
4boneless, skinless chicken breastsabout 1 ½ pounds
¼cupolive oil
3tablespoonslemon juicejuice of 1-2 lemons
3clovesgarlicminced
2tablespoonsfresh chopped parsley
1tablespoonfresh chopped dill
2teaspoonsfresh oregano
1teaspoonpaprika
1teaspoonsalt
1teaspooncracked pepper
Instructions
Pound the chicken breasts to an even thickness and place them in a shallow dish or ziptop bag.
Pouding out the chicken helps it to cook evenly. Don't skip this step!
Whisk together the remaining ingredients and pour over the chicken. Toss to coat.
Cover and refrigerate for at least 30 minutes and up to 8 hours.
Remove chicken from the marinade and place on a hot grill. Grill for about 5-6 minutes per side, until cooked to an internal temperature of 165 degrees.
Let rest for 5 minutes before serving.
Notes
Marinating chicken for much longer than 8 hours can cause it to get a bit mushy. We like to pop this in the fridge in the morning and then grill for dinner, but even 30 minutes is enough to add flavor.If using dried herbs, reduce by 1/3. We love this on the grill, but it’s also great in the air fryer at 380 degrees for about 10-12 minutes or until the chicken is cooked through.
