This easy Juicy Oven Roasted Chicken Breasts recipe is great for meal prep and busy weeknights. Thin chicken breasts are simply seasoned, baked until tender and finished with rich pan juices for extra flavor and moisture.
Optional: freshly chopped parsley and lemon slices for garnish
Instructions
Preheat oven to 425 degrees. Line a baking sheet with foil or parchment paper for easy cleanup.
Rub both sides of the chicken breasts with olive oil.
Mix the seasoning blend in a small bowl. Sprinkle it evenly over both sides of the chicken and rub it in gently.
Bake for 10-15 minutes (depending on thickness) until the internal temperature reaches 165°F in the thickest part.
Remove from the oven and top each piece with a pat of butter.
Let rest for 5 minutes as the butter melts before slicing. Spoon pan juices over the top and garnish with parsley and lemon, if desired.
Notes
You can purchase thin-sliced chicken breasts or regular. If you have regular cut, you’ll want to slice them yourself so that they are around ½ inch thick. This will help them to cook evenly in the time listed.Feel free to mix up the seasoning blend however you like or use a packaged seasoning mix.
