Italian Dressing Recipe

This homemade Italian dressing recipe is fresh, zesty, and ready in 5 minutes. Better than store-bought and made with simple pantry staples.

Ingredients

  • ¾ cup extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 lemon juiced
  • 2 cloves garlic grated on a microplane grater
  • 2 tablespoons fresh chopped parsley
  • 1 ½ teaspoons dried oregano
  • 1 teaspoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dijon mustard
  • ½ teaspoon kosher salt more to taste
  • ½ teaspoon cracked pepper
  • 2 tablespoons grated Parmesan cheese

Instructions

  • Whisk together all of the ingredients until smooth and emulsified. Alternately, add everything to a jar with a tight fitting lid and shake well.
  • Taste and add additional salt or vinegar, until the dressing suits your tastes.
  • Store, covered, in the refrigerator for up to 10 days.

Notes

If using fresh herbs, use 2-3 times the amount called for.
If you don’t have all of the dried herbs called for, you could substitute in 2-3 teaspoons of dried Italian herb seasoning to replace the oregano, basil, and rosemary.
Shake well before serving to bring the dressing back together. If the oil hardens in the fridge, you can easily bring it to room temperature by holding the sealed jar under hot running water from your faucet or letting it sit in a bowl of warm water for a few minutes while you finish cooking dinner.
