Homemade Caesar Dressing

This dressing is creamy, tangy, and packed with garlic flavor. It is perfect over chopped romaine with croutons and shaved Parm for a classic Caesar salad.

Ingredients

  • 1 cup mayonnaise
  • 1 lemon juiced
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic grated on a microplane grater
  • 2 teaspoons dijon mustard
  • 1 teaspoon red wine vinegar
  • 1 teaspoon Worcestershire sauce
  • ½ cup grated Parmesan cheese
  • Pinch of salt
  • Fresh cracked pepper to taste

Instructions

  • Add all of the ingredients to a small bowl and whisk well to combine. Add a splash of water if you’d like a thinner consistency.
  • Taste and season with additional lemon juice, salt, or cracked pepper.
  • Store tightly covered in the fridge for up to 5 days, whisking or shaking well before serving.

Notes

We like a pretty peppery dressing and just crack enough pepper over the top of the dressing to cover the surface.
If your dressing tastes like it’s missing something, it’s likely either an extra dash of acid (lemon juice or vinegar) or more salt. Adjust as needed.
If your dressing is thicker than you’d like, whisk in a teaspoon or two of water to thin it out.
You’ll want to use the powdery kind of Parmesan cheese, though preferably not the shelf-stable green jar kind. I buy it in the ‘fancy’ cheese section, already grated into a powdery texture.
