Festive and delicious, but also totally easy - that's what we're loving about these Grinch cookies. They start with a box of cake mix and a tub of Cool Whip. Doesn't' get much easier than that and the cookies turn out so light and chewy.
1teaspoonneon green gel food coloringmore as needed
½cuppowdered sugar
Red heart sprinkles
Instructions
Preheat oven to 350°F. Line a sheet pan with parchment paper.
Add your cake mix, cool whip, egg, and food coloring to a large mixing bowl. Mix the ingredients just until combined using a rubber spatula.
Use a medium sized cookie scoop and scoop balls of cookie dough directly into a bowl of powdered sugar. The dough will be sticky. Roll the dough around to coat in the powdered sugar.
Place the cookies on the prepared baking sheet, leaving about 2 inches between each cookie.
Bake for 12-13 minutes until the edges are firm and cookies look set on top
Remove from the oven and immediately place a heart sprinkle on each cookie, lightly pressing it down so it adheres to the cookie.
Allow the cookies to cool on the sheet pan before serving.
Notes
This recipe works well with a yellow cake mix as well, but adjust the food coloring as needed to get the color you prefer.This cookie dough is very sticky. We don't touch it with our hands until it's in the powdered sugar. Drop it directly from the cookie scoop into the powdered sugar and then toss it around lightly to coat.We like these heart sprinkles. Save the pink ones for Valentine’s Day treats and use the red ones in these cookies.
