Green Goddess Chicken Salad

The bright, zippy Green Goddess dressing is what makes this chicken salad so special. It's packed with loads of fresh herbs, tons of garlic, and has both freshly squeezed lemon and lime juice. This is perfect as a sandwich, in a wrap, or just eaten with a fork. Either way, you can't go wrong with this for a summer lunch.

Ingredients

For the salad:

  • 3 cups cooked, chopped or shredded chicken
  • 1 cup slivered almonds
  • ½ cup finely chopped celery
  • ½ cup minced red onion

For the dressing:

  • 1 cup parsley packed
  • 1 cup cilantro packed
  • ½ cup nonfat Greek yogurt
  • ½ cup mayonnaise
  • 3 cloves garlic
  • 2 green onions
  • 2 tablespoons fresh dill
  • 1 lemon juiced
  • 1 lime juiced
  • 1 teaspoon salt
  • 1 teaspoon cracked pepper

Instructions

To make the salad:

  • Add the chicken, almonds, celery, and onion to a mixing bowl and stir to combine.

To make the dressing:

  • Add all of the ingredients to a food processor or blender and process until smooth. Taste and add additional salt and pepper, if needed.
  • Pour the dressing over the chicken and toss to coat. Refrigerate for 1 hour to allow the flavors to meld before serving.

This chicken salad is delicious eaten as a dip with crackers or chips, but we most often serve it wrapped in a large tortilla or between sliced bread.
