Cajun Smothered Green Beans and Potatoes

These Cajun Smothered Green Beans and Potatoes are big on flavor with savory bacon. The veggies are cooked up in a Cajun seasoned sauce for maximum flavor!

Ingredients

  • 6 slices thick cut bacon
  • 1 medium sweet onion diced
  • 4 cloves garlic minced
  • 2 tablespoons flour
  • 1 teaspoon Cajun or Creole seasoning see notes
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cracked pepper
  • 3 cups chicken stock
  • 1 ½ pounds fresh green beans trimmed and cut in 2 inch pieces
  • 1 pound baby yellow potatoes halved
  • Salt to taste

Instructions

  • Dice the bacon into bite-sized pieces and add to a large, heavy bottomed pot over medium heat.
  • Cook the bacon until the fat has rendered and the edges are just beginning to crisp up. Add the onion and cook for 5 minutes or until soft and translucent.
  • Add the garlic and cook for 30 seconds more, until fragrant.
  • Add the flour, cajun seasoning, paprika, onion powder, garlic powder, and pepper to the bacon mixture and cook, stirring constantly, for 2-3 minutes.
  • Slowly pour in the broth, stirring constantly while scraping up any browned bits from the bottom of the pan.
  • Add the green beans and stir to submerge the beans in the liquid. Bring to a boil, reduce heat to a simmer and cover the pot. Simmer for 30 minutes.
  • Add the potatoes to the pot and stir to combine. Cover the pot and continue simmering for 25 minutes or until the potatoes and green beans are as tender as you’d like.
  • Remove the lid from the pot and simmer until the liquid has thickened and reduced, about 10 minutes.
  • Taste and add salt or additional Cajun seasoning, as needed.
  • Serve hot.

Notes

Cajun Seasoning: We use Tony Chachere’s Creole Seasoning. It’s pretty salty so we don’t add much additional salt. You may need more salt depending on the seasoning blend you use.
Potatoes: We use a small bag of baby potatoes that are about the size of a golf ball. If your potatoes are larger, you’ll want to cut them into smaller pieces.
Cook Times: We like our green beans to be very tender. If you’d like your beans more tender-crisp, you can cook for as little as 15 minutes before adding the potatoes. For beans that are so tender they begin to fall apart (which is really how I like them best) cook for around 40 minutes before adding the potatoes. You can really cook for anywhere between 15-40 minutes before adding the potatoes to get them just how you like them.
