Blueberry Crumble Bars

Easy Blueberry Crumble Bars that work for breakfast OR dessert! Made with simple ingredients like oats, blueberry preserves, and fresh berries. Perfect for using up summer blueberries or satisfying that sweet tooth any time of year. Skip the glaze for breakfast, add it for dessert!

Ingredients

For the bars:

  • 1 1/4 cups flour
  • 1 1/4 cups quick cooking oats
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 3/4 cup butter melted
  • 1 teaspoon vanilla extract
  • 1 cup blueberry preserves
  • 1/2 cup fresh blueberries optional

For the glaze:

Instructions

  • Preheat the oven to 350 degrees. Line a 9x9 baking dish with parchment paper or spray with non-stick spray.
  • In a medium bowl, combine the flour, oats, sugar, brown sugar, and baking powder. Mix well.
  • Pour in the melted butter and vanilla and stir until the flour sugar mixture has a crumbly consistency. Reserve 1 1/2 cups of the oat mixture and set aside.
  • Press the remaining mixture into the bottom of the prepared baking dish.
  • Gently spread the preserves over the crust, being careful not to break the crust as you spread.
  • Sprinkle the fresh blueberries over the top and then sprinkle the reserved oat mixture over it all.
  • Bake uncovered for 30 minutes or until the top is golden brown.
  • Let bars cool completely before preparing the glaze.
  • To make the glaze, whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle over the top, let sit for 20 minutes to firm up, and cut into 9 bars to serve.

Notes

The bars themselves aren’t super sweet. If you leave the glaze off I think you have a totally respectable breakfast bar. If you do add the glaze and eat them at breakfast time, it’s still more nutritious than a donut and you’ll get no judgement from me! Either way, these can easily play double duty as breakfast and dessert.
For a sweeter dessert, swap the preserves for blueberry pie filling.
These bars will really work with any jam/jelly/preserves. Use what you’ve got!
Store in the fridge in a covered container for up to 5 days.
