Double Chocolate Chip Cookies

These thick and chewy cookies are loaded with double the chocolate. We love how easy these are to make - just 20 minutes from start to finish and you don't even need a mixer.

Ingredients

  • 8 tablespoons butter melted
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1 teaspoon espresso powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 350.
  • Add the butter and sugars to a mixing beat and stir well to combine.
  • Beat in the egg and vanilla until well combined.
  • Add the flour, cocoa powder, espresso powder, baking soda, and salt to the mix and stir until a soft dough forms.
  • Stir in the chocolate chips.
  • Use a large cookie scoop to drop balls of dough onto a parchment lined baking sheet.
  • Bake for 11 minutes exactly. Cookies will look underdone, but will continue to set up while cooling.
  • Cool on baking sheet for 5 minutes before transferring to a cooling rack. Cool before serving.
  • Store in an air-tight container.

Notes

The espresso powder can be found in most any grocery store near the rest of the ground coffee. It's entirely optional here, but it really helps deepen the chocolate flavor of the cookies.
