Rotel Dip

It just takes 4 ingredients to make an incredibly creamy, cheesy Ro*Tel dip with big, bold flavors. This is perfect for football games or to serve up at Taco Tuesday.

Ingredients

  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 16 ounces Velveeta
  • 10.5 ounces Ro*Tel

Instructions

  • Heat a large skillet over medium heat.
  • Add the beef to the skillet and cook until browned, breaking up the meat as it cooks.
  • When the beef is cooked through, drain the grease.
  • Add the taco seasoning and ¼ cup of water to the beef and stir to combine.
  • Cut the Velveeta into cubes and add to the skillet with the beef.
  • Add the Ro*Tel (do not drain) to the skillet and stir to combine.
  • Cook over low heat, stirring constantly, until the cheese has melted.
  • Serve immediately or transfer to a slow cooker to keep warm.

Notes

This can also be made directly in the slow cooker. Brown the beef in a skillet and then transfer to a slow cooker with the remaining ingredients. Cover and cook on low for 1 hour or until the Velveeta melts and the dip easily stirs together. 
Sprinkle with green onions or cilantro before serving, if desired.
