Crockpot Ham and Potato Soup
It doesn't get much simpler than soup in the slow cooker! This recipe can be made with leftover ham or a package of the already diced ham from the grocery store.
- 5 baking potatoes peeled and diced
- 2 cups leftover ham diced
- ½ sweet onion diced
- 3 ribs celery diced
- 2 carrots diced
- 1 clove garlic minced
- 1 teaspoon salt
- 1 teaspoon ground pepper
- 4 cups chicken broth
- ½ cup flour
- 1 cup milk
- 1 cup heavy cream
- 12 ounces evaporated milk
Add the potatoes, ham, onion, celery, carrots, garlic, salt, pepper, and chicken broth to the slow cooker and stir to combine.
Cover and cook on high for 3 hours or low for 6 hours.
Add the flour and milk to a mason jar, seal tightly, and shake well. Alternately, add the flour and milk to a small bowl and whisk well.
Add the milk mixture to the soup, along with the cream and evaporated milk. Stir well to combine.
Cover and cook on high for 30 minutes to allow soup to thicken before serving.
