The Best Spinach Artichoke Dip

Ingredients

  • 8 ounces cream cheese room temperature
  • 1/4 cup mayonnaise
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 ounces artichoke hearts diced (canned)
  • 1/2 cup frozen chopped spinach thawed
  • Tortilla chips, crackers, Hawaiian rolls, for serving

Instructions

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine the cream cheese, mayo, Parmesan, mozzarella, garlic, salt and pepper. Beat with a mixer on medium speed until well combined.
  • Drain the artichokes and spinach very well, removing as much liquid as possible. Add to the mayo mixture and stir by hand to combine.
  • Spread into an 8x8 or 9x9 baking dish and bake for 20 minutes or until heated through and the cheese is melted.
  • Serve dip warm with tortilla chips, crackers, or Hawaiian rolls for dipping.

Notes

If you'd like a bit of spice in your dip, stir in a teaspoon of red pepper flakes. For even more of a kick, add minced jalapeno.
To make this in the slow cooker, follow the recipe as directed but add directly to a slow cooker and cook on low heat until the cheese is melted and everything is nicely combined, about 1-2 hours.
