Totchos (Tater Tot Nachos)

These tater tot nachos make a fun family dinner, but they're also perfect for serving up as an appetizer or during the big game. Feel free to add your favorite toppings!

Ingredients

  • 32 ounces tater tots
  • 1 1/2 cups cooked leftover taco meat
  • 2 cups shredded cheddar
  • 1/4 cup guacamole more or less to taste
  • 1/4 cup sour cream
  • 1/4 cup pickled jalapeno slices
  • 1/4 cup diced tomatoes
  • Cilantro for garnish

Instructions

  • Bake the tots according to package directions on a large, parchment lined baking sheet in a single layer.
  • When the tots have five minutes remaining, remove from the oven and sprinkle on the meat and cheese. Return to the oven to finish cooking.
  • Remove from the oven and drop spoonfuls of guacamole and sour cream over the nachos. Sprinkle with the jalapeno, tomatoes, and cilantro.
  • Serve hot.

Notes

If you don't have leftover taco meat, you can use a pound of ground beef + taco seasoning to make the meat. You'll likely not need the full amount, but use as much as you like.
This recipe is a great guide, but feel free to add more or less of your favorite toppings. You really can't mess up nachos!
