Waffle Iron Barbecue Chicken Sandwich
These waffle sandwiches are so much fun I can hardly deal! With just a few simple ingredients you can have a seriously fancy sandwich. Sure, it's only fancy because it's waffled, but whatever. I still call that fancy, don't you?

1 cup cooked shredded chicken breast 3 tablespoons barbecue sauce 4 slices sourdough bread 4 slices sharp cheddar cheese 2 tablespoons olive oil
Preheat the waffle iron.
In a small bowl, stir the barbecue sauce and chicken together to coat.
Brush one side of each slice of bread with the olive oil.
Lay one slice of bread, oil side down, on the waffle iron. Top with one slice of cheese and half of the chicken.
Top with another slice of cheese and the other slice of bread, oil side up.
Gently press the waffle iron closed. Cook the sandwich for 3 minutes or until bread is slightly crispy.
Repeat with the remaining sandwich.
