Fried Green Tomatoes with Cajun Remoulade

2 large green tomatoes 1 cup flour 1 cup buttermilk 1/2 cup Panko bread crumbs 1/2 cup cornmeal 1 teaspoon seasoned salt divided Oil for frying 1/3 cup mayonnaise 1 tablespoon mustard 1 teaspoon Cajun seasoning 1/2 teaspoon vinegar
Heat 1 inch of oil in a large skillet over medium heat to 375 degrees.
Wash and slice the tomatoes into 1/4 inch slices. Pat dry.
Add the flour to a small bowl and stir in 1/2 teaspoon of seasoned salt.
Add the buttermilk to a shallow dish.
Add the Panko, cornmeal, and remaining seasoned salt to a third dish and stir to combine.
Dredge the tomato slices in the flour, then the buttermilk, and then the bread crumbs. Shake off excess.
Fry for 2 minutes per side, or until golden brown.
Place on a paper towel lined plate to drain.
To make the dipping sauce, whisk together the remaining ingredients.
