Fried Green Tomato and Pimento Cheese Sandwiches

I went ahead and made one of my favorite sandwiches in all of the land for you guys. It's full of my favorite pimento cheese recipe. And then, because I'm nuts, I also add some perfectly crispy and crunchy fried green tomatoes.

  • Heat a large skillet over medium heat until hot. Spray with non-stick cooking spray.
  • Butter one side of each slice of bread.
  • Place one slice of bread, butter side down, in the hot pan. Top with 1/2 of the pimento cheese. Add one fried green tomato and top with the remaining pimento cheese. Place the second slice of bread on top, with the butter facing up.
  • Cook until the bottom is golden brown and flip. Continue cooking until the bottom is golden and the cheese has melted.
  • Serve hot.
