Lomo Saltado

Ingredients

  • 12 ounces thinnly sliced ribeye steak
  • 1/2 teaspooon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 yellow bell pepper
  • 1/2 poblano pepper
  • 1/2 red onion
  • 1 to mato
  • 2 tablespoons soy sauce
  • 1/3 cup beef broth
  • 1/4 cup chopped fresh cilantro
  • 1 cup freshly fried French fries for serving
  • 2 cups cooked white rice for serving

Instructions

  • Slice the steak into thin strips and season with salt, pepper and garlic powder.
  • Heat the oil in a large heavy skillet over high heat. Add the steak and cook, stirring occasionally, until browned.
  • While steak is cooking, slice the peppers, onion, and tomato into thin slices.
  • Add the vegetables to the pan with the steak and cook for 2 minutes, stirring constantly.
  • Add the soy sauce and beef broth to the pan and stir well. Cook for 2 minutes.
  • Remove from heat and sprinkle with cilantro.
  • Serve over rice with french fries.

Notes

If you can find an aji amarillo chili pepper, please omit the yellow bell pepper and poblano in place of that. Here in my little grocery store in the middle of nowhere, I did the best I could. I wanted the bright yellow color and a bit of spice, so I did what I had to do. Forgive me. It was still delicious.
