Dice the pork loin filet into small, bite-sized pieces.
Heat the skillet over medium high heat and add the olive oil. When the olive oil is hot, add the pork to the skillet and cook, stirring occasionally, until browned, about 5 minutes.
Add the pasta, broth, milk, and ranch dressing mix to the skillet and stir well to combine.
Bring to a boil, reduce to a simmer, and cover. Cook for 6 minutes.
Remove lid from pan and stir. Continue cooking, uncovered, for 6 minutes or until pasta is al dente.
Remove from the heat and stir in the cheese. Cover and let sit for 2 minutes to melt the cheese.
Sprinkle with parsley before serving.
