Honey Cinnamon Blueberry Crisp

Ingredients

For the filling

  • 16 ounces frozen blueberries
  • 1/4 cup honey
  • 1 tablespoon flour
  • 1 teaspoon lemon juice

For the topping

  • 2/3 cup flour
  • 2/3 cup brown sugar
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon
  • 1/2 cup Hellman's Real Mayonnaise

Instructions

  • Preheat oven to 375 degrees. Spray an 8x8 or 1.5 to 2 quarts baking dish with non-stick spray.
  • Add the blueberries, honey, flour, and lemon juice to a mixing bowl and stir well to combine. 
  • Add the blueberries to the prepared baking dish.
  • Add the flour, brown sugar, oats, cinnamon and mayonnaise to a small mixing bowl and use a fork to combine into a crumbly texture.
  • Sprinkle the topping over the blueberries.
  • Bake for 35 minutes or until top is golden brown and the berries are bubbling.
  • Let sit for 5 minutes before serving.

Notes

Not to worry, there is no hint of mayo flavor in this dish! It just adds the moisture and structure needed for making the crisp topping. 
You can use a variety of berries in this recipe. It works great with a mixture of blueberries, blackberries, and raspberries.
