Pumpkin Spice Cool Whip Cookies

Soft and chewy cookies made with just 4 ingredients? Yes, these do seem like a dream, but they're real and they're so delicious! You can use any variety of cake mix you like here, but we went for pumpkin this time around.

Ingredients

  • 1 box pumpkin cake mix see notes
  • 8 ounces Cool Whip
  • 1 large egg
  • 1/2 cup powdered sugar

Instructions

  • Preheat oven to 350°F. Line a sheet pan with parchment paper.
  • Add your cake mix, cool whip, and egg to a large mixing bowl. Mix the ingredients just until combined using a rubber spatula.
  • Use a medium sized cookie scoop and scoop balls of cookie dough directly into a bowl of powdered sugar. Roll the dough around to coat in the powdered sugar.
  • Place the cookies on the prepared baking sheet, leaving about 2 inches between each cookie.
  • Bake for 15-16 minutes until the edges are firm and cookies are set.
  • Allow the cookies to cool on the sheet pan before serving.

Notes

This recipe works well with any variety of cake mix. Feel free to swap it out depending on your tastes!
The cookie dough will be very light, fluffy, and sticky. We find it easiest to use a cookie scoop (or two spoons) to drop the dough directly into the powdered sugar. You'll want to avoid touching the dough with your fingers until you've got it in the sugar.
