Greek Roasted Potatoes

These roasted potatoes are loaded with the bright, zippy flavors of Greece, including garlic, lemon, olive oil, and oregano. Simple to make with just 3 ingredients and they turn out perfect every time!

  • Chop the potatoes in half (quartering any extra large ones) and place in a large bowl. Cover potatoes with water and let soak for 30 minutes.
  • While potatoes are soaking, preheat oven to 400 degrees.
  • Drain the water from the potatoes and rinse with fresh water to remove starch.
  • Dry potatoes thoroughly and then add to a mixing bowl along with the salad dressing. Toss to coat. Add the Greek seasoning and stir again.
  • Arrange the potatoes in a single layer on a large baking sheet.
  • Roast potatoes for 40-45 minutes, stirring once halfway through cooking, until potatoes are fork tender all the way through and crisp on the outside.
  • Sprinkle with fresh parsley before serving.

Notes

Dressing: We use our homemade Greek dressing for this recipe. If using store bought, you’ll want the vinaigrette style dressing and not a yogurt based dressing.
Seasoning: We use and love Cavender’s Greek Seasoning. It’s perfect on these potatoes, but we also put it on chicken, steak, veggies, and more.
Season with additional Greek seasoning after roasting, to taste.
Lemon Juice: A squeeze of fresh lemon after roasting really brightens up the flavors and adds a pop, if you like that sort of thing. My family is split down the middle on the lemon, but I love it!
Air Fryer: To make these Greek Roasted Potatoes in the air fryer, follow all of the instructions as directed for soaking and seasoning, but air fry at 400 degrees for 20 minutes, shaking the basket every 5 minutes. Test for doneness and continue cooking in 1-2 minute increments until potatoes are cooked to you liking.
