Preheat the oven to 350 degrees. Spritz a 9 inch baking dish with non-stick spray.
Peel and core the apples. Chop into bite-sized chunks, about ½ inch each.
Add apples to a mixing bowl with the remaining filling ingredients and stir to coat.
Spread apples into prepared baking dish.
To make the topping:
Stir together the flour, oats, brown sugar, baking powder, cinnamon, and salt in a medium bowl until combined.
Pour the butter over the top and stir until the mixture is crumbly, with small chunks throughout.
Sprinkle the topping over the apples.
To bake:
Bake for 35 minutes or until golden brown on top.
Remove from the oven, cover with foil, and let set for 15 minutes before serving.
Serve warm.

We like tart apples in this recipe, such as Granny Smith. Any variety will do, but sweet apples will make for an overly sweet dessert. Other good options include pink lady, braeburn, and honeycrisp as they hold up well to baking.Best served with a scoop of vanilla bean ice cream on top! Drizzle with caramel sauce for a real treat.
