Chocolate Chip Pudding Cookies

These cookies bake up so thick and soft every time, thanks to the addition of instant pudding mix! It's such a simple addition to cookie dough, but it really takes them over the top!

Ingredients

  • 1 cup butter room temperature
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3.4 ounces dry instant vanilla pudding mix
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips any variety

Instructions

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  • Add the butter and sugars to a large mixing bowl and cream together with an electric mixer until light and fluffy, about 5 minutes.
  • Add the eggs and vanilla to the butter and beat until just combined.
  • Add the pudding mix, flour, baking soda, and salt and mix until combined. Stir in the chocolate chips.
  • Use a large cookie scoop to scoop out balls of dough onto the prepared baking sheet 1 to 2 inches apart. Bake for 10-11 minutes or until edges are golden and tops are still moist, but set. Do not overbake.
  • Let cool for 10 minutes on the baking sheet before transferring to a wire rack to continue cooling.

Notes

We prefer vanilla pudding mix for a classic flavor, but you can mix things up by using other flavors of pudding mix.
Any variety of chocolate chips will do. Press extras on top before baking for the prettiest cookies.
There's no need to chill this dough - the cookies will bake up nice and thick either way. However, if you would like to chill the dough before baking, we recommend baking for one extra minute.
